Appalachian Trail Adventures has collaborated with the Summit's Executive Chef Stephen Hatch, The Foundry Restaurant and Registered Dietitians, Rosa Donohue MS, RD, CND and Jill Corey MS, RD, who both have a Master of Science in Clinical Nutrition. They have created our delicious spa menu and work daily when needed with our chefs. Our meals are a healthy balance of carbohydrates, proteins and healthy fats. We also offer special diets, such as vegetarian, vegan, wheat and dairy-free options. Additionally, all meals will be well-balanced with some type of protein and a complex carbohydrate. Studies have shown that protein slows the rate of which the sugar (carbohydrate) breaks down. Therefore, you will have sustainable energy that will last far longer than the carbohydrate on its own.

Breakfast and lunch are provided by the Summit Lodge's Chefs while at dinner hikers dine at the Foundry Restaurant. Breakfast is served at the Summit's restaurant overlooking the beautiful manicured gardens, and lunches are prepared by the breakfast chef. Hikers have a picnic lunch either on a mountain summit or after the hike at a scenic area such as a lake shore. Breakfast and Lunch Menu's can be found below

The Foundry Restaurant's Executive Chef Sean Miller has created a delicious spa menu for ATA hikers who are seeking healthier meals. The menu is able to cater to special dietary restrictions such as vegan, low sugar, sodium-, wheat- and dairy-free options. This enables ATA to accommodate couples, athletes, weight loss vacationers, as well as all those with no dietary restrictions who seek to eat healthily.

Located on the banks of the Summit Pond, The Foundry offers a distinct year-round dining experience. In addition to the ATA hikers' menu, The Foundry offers two menu options - an American Bistro-Style menu in its formal dining room, as well as a more casual Tavern menu in the bar. Their impeccable chef-driven cuisine provides guests the finest cuts of prime meats, fresh seafood, homemade pastas and much more. They use the freshest ingredients to create mouthwatering appetizers, flavorful side dishes and irresistible desserts - designed to engage all of your senses.  The Foundry experience focuses on providing un-paralleled hospitality in a warm and relaxing setting.  In addition to its dining options, The Foundry offers live entertainment regularly and is host to many of the area's events. PORTION SIZES

 

Our program is designed for those seeking a healthier lifestyle, including weight loss and athletes. Therefore, we provide two meal sizes for breakfast and lunch: weight loss portions and hikers or athletes portions. However, the Foundry restaurant can no longer provide two portion sizes and is just serving a normal-sized dinner.


Weight Loss Portion ~ 1500-1700 Daily Calories

Hiker/Athlete Portion ~ 2200-2500 Daily Calories
